BBQ Roast Chicken Quarters

Mmmm, who doesn’t love BBQ? If they could (maybe they have…) bottle it into a fragrance you would have all meat loving men on their knees.  This a very simple recipe I make on a regular basis, it hadn’t occurred to me to post this yet until I was asked by a dinner guest… ‘What do you do with your Chicken?”

Ingredients:

4 chicken Quarters (leg and back attached) trim the skin and fat
Juice of 1/2 lemon
2 tsp fresh parsley*
2 tsp fresh thyme*
2 tbs olive oil
salt and pepper to taste

*you can use dried if you don’t have fresh, experiment with other herbs too.

Method:

Place all ingredients in a plastic bag or bowl and allow to marinade at least 30min.  Keep one side of the grill nice and hot and the side you are cooking on nice and low.  Place the chicken skin side down to begin, cook about 12min, turn and cook another 15 or so min, or until cooked.  Watch out for extreme flare up especially in the beginning as you don’t want to blacken the skin but crisp it up nicely.

 

Serve with your favorite salad and ENJOY!!
