Depending on who you talk to Chick Peas are actually up for debate as to wheter they are Paleo or not… On legumes specifically, the argument against them being Paleo is that they are not edible in their ‘raw’ state, requiring additional processing (i.e soaking or cooking). However, many legumes actually are edible raw, and Paleo man most certainly would have eaten those that he was able to gather in his environment. So I’ll let you decide on this delicious recipe. I eat this as a part of a Post Workout meal, to get in those extra carbs i need (and have deserved) to fuel my muscles.
2 tsp fat (I use coconut oil)
1 1/2 C Cabbage
3/4 C Onion diced
3/4 C Sweet Bell Pepper small dice (I’ve used a yellow and orange)
3/4 C Coconut Milk*
1-2 tsp Ginger grated
1-2 tsp Garlic minced
2tsp curry powder (or less if you are not too fond of curry)
1 Can (540 ml) Chick Peas rinsed thouroughly
Pinch of dried Basis
Salt and Pepper to taste
*Use the full fat kind, Cavemen did not have the ‘lite’ kind and you are depriving your body of the good kind of fats too, also fat satiates us.
Add fat to pan on medium heat, saute cabbage until it shrinks down. Add the onions peppers and saute 3-4min or until just softening. Add remaining ingredients and stir well. Put lid on and simmer for about 5min until the chick peas have warmed all the way through, SERVE AND ENJOY!!!
I enjoyed these with a delicious homemade turkey burger. If you want this recipe too, let me know… leave a comment.
