Vegetable Medly with Pecans

Sometimes it gets hard to think outside the box and make dinner interesting.  Meat and Veg, pretty basic and yes it can get boring if you don’t spice things up a little here and there.  This on one of my favorite things to cook when we are having a nice big steak, it pairs really nicely with any red meat.


1tbs coconut oil
1/4C water
3 Zucchinis quartered and diced
1 Red Bell Pepper diced
6 mushrooms
1 small Yam diced (optional)
1 Tomato diced
1/4C onion
1/4C Pecan pieces
optional: 1/2C crumbled goat feta
1tbs Garlic minced
S&P to taste



Fry off onion in coconut oil until transparent, add yam and water and cover, cook yam until almost cooked through, test with a fork.  Drain off the excess water and add the garlic and remaining vegetables except for the tomato, you may need to add a little more coconut oil.  When the vegetables are cooked add the diced tomato, pecans and optional feta, heat through and serve.

Experiment with seasonings on this one.  I often use pre-packaged seasoning like Greek, Garlic Plus, Lemon Pepper and Garlic and Peppers.  Depending on your paleo comfort level with using pre-packaged products, these are pretty harmless and exceptionally convenient.  Read the labels and decide for yourself, the only issue I have with them is the sodium content is a little on the high side.

I love to experiment in the kitchen and as you can see my photo's are not all fancy, they are usually taken with my phone just as I am about to dish up.
