I must say this turned out way better than I though it would especially since I thought it up today and I’m really stoked on my first shot! I would often eat protein pancakes post workout made of oats, cottage cheese, egg whites and protein powder but since going strict paleo, dairy and grains are ALL gone. Test these suckers out, they are delicious and very very satisfying.
1C Almond meal*
1/2C grated apple
1/4C coconut milk
1tsp vanilla essence
1/4tsp baking powder (non paleo)
*I make my own almond meal from whole almonds I put in a coffee grinder, almond meal is so expensive and bulk almonds are cheap; it takes no time to grind them yourself.
2tbs coconut butter
1tsp maple syrup
place all ingredients in a bowl and mix until combined. Cook on LOW heat, my hotplate is between 3-4 if that means anything, just past the first quarter of hotness… These beauties brown pretty quick so don’t set the temperature too high, you will find what works. When bubbles start to appear and the top looks a little skinned it’s time to flip. Mix the coconut butter and maple syrup together and put a small amount on top. ENJOY!!!!
NB: Don’t go too crazy on making these, they are meant to be a treat and not a meal, try to reserve them as a post workout meal or a ‘sometimes snack’.
Remember this is a treat and these pancakes are not meant for mass consumption.
