If you are looking for a little desert or something different for breakfast here is a great recipe for custard. I would recommend making this in advance as the cooking time is long but well worth it.
1C coconut milk
1tbs maple syrup (optional, I used this as my peaches were not particularly sweet)
1 Peach sliced thinly
Whisk coconut milk, eggs and maple syrup until combined. Place peaches in the bottom of custard dish and pour liquid over the top. Place the dish in a water bath and cook for about 45min-1hr at 300F or until the custard has set.
