Avocado Pudding

Just do it!  Don’t think about the avocado other than the texture of it, all these flavors balance so well that you don’t even know you are eating avocado.  I’ve put the base pudding ingredients at the top and the variations below.


1 large ripe Avocado

1/8-1/4 cup Paleo Sweetener, I prefer palm sugar or maple syrup.

½ teaspoon natural vanilla extract

1-2tbs coconut milk

Extras: (only add one or two of these, you can mix and match or create your own flavours)

2 tablespoons raw cocoa powder

8 mint leaves muddled in 2tbs boiling water, you may wish to omit the coconut milk so the pudding is not too runny, let the water cool before adding to the avocado

1tsp Lemon rind and 1tbs lemon juice

2tbs pure raspberry syrup (just pure raspberries)


The variations are endless, be creative


Blend everything together, if using one of the ‘wet’ extras I would not add the coconut milk and see if it needs thinning at the end.  I have also made avocado pudding using a basic custard recipe out of egg yolks and whipped the custard and avocado pudding together into an amazing lime custard pudding… I’ll do that again and take pictures next time.

I love to experiment in the kitchen and as you can see my photo's are not all fancy, they are usually taken with my phone just as I am about to dish up.
