Garlic Pepper Marinaded Deer Steaks

First things first, if you don’t have deer, obviously use any other red meat.  We hunt in the fall and so our freezer if full of our bounty, having beef is kind of a treat for us.  We all know that Paleo meals are basically just combinations of meat and vegetables, but sometimes we get a little bored and stuck for ideas when cooking.  Here is a very simple marinade that will be sure to satisfy your most discerning of steak lovers.  This marinade is enough for about 2 new your strip loin, or 2 T-bone or about 3 eye fillets.


Steak! refer to quantitie listed above
3 tbs garlic pureed (roasted garlic is amazing to use here)
2tbs freshly ground pepper (lots!)
big pinch of sea salt

optional extras:

1 small red chilli pepper



Put it all in a bowl and stir up, let it sit at room temperature for at least 20min before cooking.  Pre-heat your BBQ on high and sear the steaks on both sides about 1-2 min per side depending on the thickness of your steak and then transfer to the top rack reducing the temperature to low.  Allow the meat to cook up here for about 2-3 min for a rare steak 5min for med rare, more time for more cooked but why would you want to do that… :)

You should always allow your meat to rest for a couple of minutes before plating up.  I served ours with a simple salad dressed with olive oil and balsalmic, dried red peppers and dried garlic.
