I realized the other day I only had my first recipe up for pancakes and I have made them several times since, and much much better. Here are a couple of photos I found on my phone that I took way back when our gym was doing its biannual Paleo challenge.
There is some baking powder in these which is NOT paleo, if you have another rising agent that could fit the category then please please please send it to me. I provide these recipes because following a strict Paleo diet is hard and being able to eat comfort foods like pancakes can make all the difference in being able to stick as closely as possible to the rules. I don’t feel a small amount of baking powder is detrimental to your health.
1/2 small mashed yam
1/2 mashed banana
1/2 C almond butter
1tbs egg whites
1/2 tsp baking powder
water (enough to thin out the batter into pancake consistency)
coconut oil for cooking
mix all ingredients and let it sit for about 5min to let the baking powder to activate. Heat a pan on med-low to med heat and pour batter into what ever size you like. Be mindful that these have a tendency to burn due to the high oil content of the almond butter so er on the side of low temp for the first ones, you will figure it out.
Sometimes we add some blueberries and we eat them with the delicious coconut butter and maple syrup topping mentioned in the first Paleo pancake recipe.
