Gussied up Viking Hash

The original Viking Hash is a couple pounds of bacon fried up with some onions and grated yams. My version is a little less taxing on the heart but just as delicious, plus there are many more vegetables to balance out all the delicious cured pork goodness.

Ingredients:

1 med Yam shredded on the cheese grater (skin and all)
5 strips bacon
1/4 C diced onion
3/4C diced peppers (i’ve got red and yellow going on in the picture)
5 mushrooms sliced
big handful of spinach
salt
pepper
dash cinnamon

 

Method:

Dice up your bacon pretty small and fry it off with the onion, you shouldn’t need anymore grease but if you are choosing a ‘lean’ cut of bacon add a touch of coconut oil to help things along. Add the peppers and mushrooms and cook slightly before adding the shredded yam. Resist stirring too much so that the yam has a chance to brown on the bottom and flip your mix with a spatula. Season to taste, don’t forget the cinnamon, there is nothing like yams and cinnamon together!!! When almost done add the spinach and let it wilt before serving. I put a couple of poached eggs on the top of this but if you don’t need the protein it is perfectly delicious without. ENJOY!!!
