In many of my meat recipes you will see a Greek salad accompanying the food. This is our go to side and when you eat it you will know why. It has so many great vegetables in it and is packed full of good fats, sometimes I’ll make a huge one at lunch and we will have it again with dinner.
1 ripe avocado
1 diced bell pepper
1/4C thick diced sweet onion
2 tomatoes cut into bite sized pieces
1/2 a cucumber halved and sliced chunky
1/8C sundried tomatoes packed in olive oil
1/8C artichoke hearts
Seasoning (Greek if you can find one not packed with extras, I found a great one at the summer market locally)
Put it all in a bowl and mix it up! Add a much balsamic and olive oil as you like, always good!
