My Mum used to make Pork Schnitzel when I was a kid and after I got off the phone with her the other day I had a desire to have a little home cooking. Traditionally the schnitzel would be crumbed with stale bread crumbs but this is crumbed in a delicious mixture of paleo goodness!Ingredients:
2 Pork chops, trimmed of fat
1C ground almonds
2tbs coconut flour
1tbs Italian spices
pinch of salt and pepper
coconut or olive oil for cooking
*optional 2tbs Parmesan cheese*
I use a meat mallet but if you don’t have one just use a rolling pin or even your fists if you need to let some anger out! Smash down the pork chop starting from the center and working out. I use the knobbly side of my meat mallet first to break up the protein fibers flip the pork chop over and continue the same way until I reach the desired thickness. I use the flat side to finish things off.
Once your meat is nicely smashed mix together all you dry ingredients, feel free to add in any other spices you may like. Smoked paprika is good in this mix too. Dip the flattened pork chop in the egg first an then press it into the dry ingredients, coating well on both sides. Cook in a pan on medium heat with a little more oil than you may usually use, you want the almonds to crisp up!
Once browned on both sides and the pork is cooked through I like to serve this in a lettuce bun with tomatoes and avocados.
