Fried plantains

oops….  I’ve been crazy busy lately and had not realized I posted this without the ingredients or method, my bad!!! Apologies.  Last week was the final week for our new On-Rampers at CrossFit North Okanagan and then on the Friday we drove down to CrossFit Overdrive in Vancouver to attend the Freestyle Gymnastics course with the pocket gymnast himself Carl Paoli.

Enough about my life, here is my new favorite snack, or addition to any delicious meal that needs a little extra ‘carbs’ (yes, you still need to eat carbs you cave lovin’ folks!)

Ingredients:

2 large ripe plantains (they are ripe if they have some blackness to them on the skin, like an over ripe banana)
cinnamon
salt
coconut oil (butter for those still using some dairy)

Method:

Best to look at the pics for reference.  Cut your plantains into 1/2″ (2cm)

slices and smush them down with a cup or a plate.  I like a cup as I can see whats happening .  You can just do thinner slices but smushing them down gets more rough edges to brown up and it makes them really tasty.  Dust them with some cinnamon and a little salt.  In a frypan heat your fat of choice to about med. heat and add your plantains.  Keep an eye on them as they can burn/brown pretty easily.  Flip and brown the other side.  EASY!!!

Serve them with the Maple Salmon or any other dish you desire.  If you are making these as a snack then I suggest putting some delicious coconut butter on top and mowing down!!!

I love to experiment in the kitchen and as you can see my photo's are not all fancy, they are usually taken with my phone just as I am about to dish up.
