Mango Salsa

Young Coconut is pretty damn tasty if you ask me.  I had never actually taken the flesh out of one myself until now and for all the work it was worth the trouble; fun too!  I love coconut water too so drinking the juice from my young coconut was a treat!.  I served this simple salsa with my Maple Salmon, check out the combo, it was amazing together!


1 flesh of a young coconut diced

1 ripe mango diced

1 green onion

1 red chilli

1tbs apple cider vinegar

salt and pepper



Place half the roughly diced flesh of the mango and the coconut into your handy dandy food processor with the apple cider vinegar and whiz it up until it is pretty macerated, this becomes the saucy part.  Add the remaining half of the mango and coconut and whiz until it is still chunky but not completely pulverized.

Chop up a small red chilli super finely NB: this was quite spicy so if you are a non spicy person only use half the amount!  You can add but never subtract!  finely slice your green onions and mix it all together.  Let the mix sit for a little to let all the flavors incorporate.

I love to experiment in the kitchen and as you can see my photo's are not all fancy, they are usually taken with my phone just as I am about to dish up.
