Ok, one of these days I will get my real camera ready and take nicer pics! All the other Paleo bloggers out there have beautiful photos of their food and then here is me with my “Just about to eat this” picture… sorry. If you knew my schedule you would probably forgive me and if you have ever cooked any of my food then I am almost 100% certain you don’t give a rats ass! Anywho.
Salmon! The fish of the Gods (or a big fat Tuna steak also GOD like) was on our plates this evening. This recipe is another one I came up with in between coaching clients today. My brain has been on mega inventive lately and thankfully it has paid off. Sometimes I worry about getting a little too inventive and the flavors not mixing how my mind has envisioned but this was freeking delicious, I was so happy for left overs!
1 big slab of salmon wild or atlantic, pictured is wild (you choose! and portion control yourself)

Heat your oven to 350F. Place the salmon skin side down on either a foil or parchment paper lined tray. Season the fish with salt and pepper, sprinkle with maple flakes and lay the lime slices over top. Bake for about 10min on the top rack or until it is med rare. Don’t overcook salmon, you kill the goodness of this fish. Sometimes I will turn the oven off at 10 min if the fish is still a little under done and leave it for anothr 5 min, this works pretty well. Serve with the mango salsa and fried plantains.
