I really can not be bothered with the whole wrapping thing. Making things look pretty, cooking wise is not my specialty, you may have picked that up with my photographs… eh, if you came here for the photography then you may be disappointed but the food is delicious!!! Really, I’m just lazy when it comes to my own food presentation, I don’t need to impress myself, I already ‘got’ me… for life . If I have a dinner party (at our table of 4… in our basement…) I do take a little extra time on presentation.
Anyway, I was going through a big phase with cabbage. It is darn delicious and serves as a lovely bed to place other yummy things on top. A brainwave hit me when I was looking at my packages of ground beef sitting next to an apple and a cabbage in the fridge… Cabbage rolls… nah… stuff the rolling that sounds like work, lets just plate it all up. So here it is, Deconstructed Cabbage Rolls.
FOR THE CABBAGE BEDS
1 head of cabbaage
1 apple julienned or cut up small
1/2 sweet onion sliced thinly
1/4 tsp nutmeg
1tbls coconut oil or butter(grass fed of course)
salt and pepper to taste
FOR THE MEAT PATTIES
2lbs ground beef
1 apple shredded
2tbs coconut flour
Greek Seasoning (you could use any seasoning you wish but I really like Greek seasoning that has some lemon, pepper flakes etc, in it)
pinch of salt (if your seasoning lacks this)
Top with a good garlic tomato pasta sauce. I like the one from simply natural organics, garlic and basil sauce.
Make the meat patties first. mix all ingredients in a bowl and make patties. I put mine under the broiler but you could do them ont he BBQ or in a pan, what ever floats your boat.
While the patties are cooking, sweat off all the Cabbage Bed veggies in a nice big pan, cover and cook on medium heat and allow some of the cabbage to brown (not crisp or burn) slightly. I did add a tablespoon or two of water as it was cooking to help sweat it off. Remove the lid when the cabbage and other ingredients are beginning to soften and cook until desired tenderness.
Plate it up and enjoy!
