I don’t know if you have ever tried this radish like vegetable Jicama but it is crunchy and delicious. A very mild version of a radish, this bulb lends itself nicely to soaking up any flavor you may wish to add to it. I julienned mine and and added some fragrant herbs and citrus, making a refreshing salad.
1/2 jicama peeled and julienned (about 2 cups)
1 red pepper thinly sliced
1 apple julienned
1/8 C thinly sliced red onion
1/2 C cilantro roughly chopped
1 med jalapeno pepper thinly sliced
Juice of 1 whole lime
2tbs olive oil
pepper and salt to taste
mix everything in a bowl and refrigerate for at least half an hour to allow all the flavors to integrate. I served ours with some salmon patties I made with left over maple baked salmon.
